Mediterranean Pasta Salad with Red Onion

Ingredients
- 350 g pasta
- 1 cup cherry tomatoes halved
- 1 cucumber diced
- 1 brown onion peeled and thinly sliced
- 1 ½ cups mixed greens combination of baby spinach and rocket
- ⅓ cup fresh herbs combination of parsley and mint, chopped
- 1 cup mixed olives pitted
- ¼ cup roasted red capsicum (peppers)
- sea salt and ground black pepper to season
- feta cheese to garnish, optional
- fresh basil to garnish, optional
Red Wine Vinaigrette Dressing
- ⅓ cup extra virgin olive oil
- ⅓ cup red wine vinegar
- 1 tbsp dried oregano
- 1 clove garlic minced
- 2 tbsp dijon mustard
- 2 tbsp honey
- sea salt and ground black pepper to season
Method
- Cook pasta in salted boiling water until al dente.
- Drain the pasta and allow to cool.
- While the pasta is cooling make the red wine vinaigrette. Combine all the ingredients in a sealed jar and shake vigorously until well combined.
- Combine the cooled pasta, tomatoes, cucumbers, red onion, greens, herbs, olives, and red peppers in a large salad bowl.
- Drizzle the dressing on the salad then gently toss all the ingredients together. Top with basil leaves and feta if desired.
- Serve immediately.
